The Quixotic story began in 2011 as a ministry at Grace Lutheran Church with the goals of giving youth employment skills and an opportunity to earn money for mission trips, confirmation camp, and other youth activities.

In 2016, we were accepted into Rockford City Market and the North End City Market in 2017. It was always our dream to grow to the point where we could return to our original vision for Quixotic Bakery and hire youth.

In 2019, that goal became a reality as we opened our first retail location in the newly refurbished Indoor City Market and hired our first employees.
